Aigamo 合鴨 is a cross between the domestic duck and a wild mallard duck. It is prized for its succulent lean meat. Aigamo ducks are also used in organic rice production where the ducklings are released into the early-growing rice paddies to eat the insects. This method of farming was devised by Japanese farmer and philanthropist Takao Furuno.
